Ingredients

  • 1 whole chicken, cut into pieces
  • 2 liters water
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 2 bay leaves
  • 4 cloves garlic, minced
  • 2 shallots, chopped
  • 2 inches turmeric, grated
  • 1-inch ginger, grated
  • 1 tablespoon coriander powder
  • Salt and pepper to taste
  • Bean sprouts, hard-boiled eggs, sliced lime, and fried shallots for garnish

Instructions

  1. In a large pot, bring the water to a boil and add the chicken pieces. Cook until the chicken is tender, then remove and set aside.
  2. In a separate pan, sauté the garlic, shallots, turmeric, ginger, and coriander powder until fragrant.
  3. Add the sautéed spices to the chicken broth along with lemongrass, kaffir lime leaves, and bay leaves.
  4. Shred the chicken and return it to the pot. Simmer for another 10-15 minutes.
  5. Season with salt and pepper to taste.
  6. Serve the Soto Ayam hot, garnished with bean sprouts, hard-boiled eggs, sliced lime, and fried shallots.

  • 1 kg beef, cut into chunks
  • 1 can coconut milk
  • 4 cloves garlic, minced
  • 6 shallots, chopped
  • 3 red chilies, chopped
  • 2 inches ginger, grated
  • 2 inches galangal, grated
  • 3 kaffir lime leaves
  • 2 lemongrass stalks, bruised
  • 1 cinnamon stick
  • 3 cloves
  • Salt to taste

Instructions

  1. In a blender, combine garlic, shallots, red chilies, ginger, and galangal to form a paste.
  2. In a large pot, sauté the spice paste until fragrant.
  3. Add the beef chunks and cook until browned.
  4. Pour in the coconut milk and add the kaffir lime leaves, lemongrass, cinnamon stick, and cloves.
  5. Bring to a boil.
