Instructions

  1. Heat olive oil in a large paella pan or a wide, shallow skillet over medium heat.
  2. Add the chicken pieces and chorizo sausage, cooking until browned. Remove and set aside.
  3. In the same pan, add chopped onion, bell pepper, and garlic. Sauté until softened.
  4. Stir in the grated tomatoes and cook for a few minutes.
  5. Add the rice to the pan and stir to coat with the oil and tomato mixture.
  6. Pour in the chicken broth and the saffron water, then bring to a boil.
  7. Reduce heat to low and simmer for about 10 minutes.
  8. Add the browned chicken and chorizo back to the pan, along with the mixed seafood.
  9. Sprinkle the peas over the top and continue to cook until the rice is tender and the liquid is absorbed, about 15-20 minutes.
  10. Remove from heat, cover with a clean towel, and let rest for 5 minutes.
  11. Garnish with fresh parsley and lemon wedges.
