Ingredients
  

  • 200 g full-fat Greek yogurt well chilled
  • 75 g fresh blueberries washed and patted dry
  • 50 g good-quality granola look for one with whole nuts and seeds
  • 1 tbsp runny honey or maple syrup
  • 1 tsp lemon zest optional, but highly recommended
  • A small sprinkle of chia seeds or flaxseed optional
  • Genuine Flavour: You get the rich slightly sour tang from authentic Greek-style yogurt, which is cut beautifully by the sweetness of the berries and honey. The granola adds a lovely, toasty, nutty depth that makes every spoonful interesting.

Method
 

  1. Start with the Base: Spoon the chilled Greek yogurt into your favourite breakfast bowl. Use the back of the spoon to create a slight well in the centre.
  2. Add the Fruit: Tumble about two-thirds of the fresh blueberries over the yogurt, letting them settle naturally.
  3. Bring the Crunch: Generously sprinkle the granola over the yogurt and blueberries. I like to concentrate it in the middle for a crunchy centrepiece.
  4. Final Flourish: Scatter the remaining blueberries over the top of the granola.
  5. Drizzle and Zest: Drizzle the honey or maple syrup evenly over the entire bowl. If using, finely grate the lemon zest over everything. This tiny step adds an incredible burst of freshness that lifts all the other flavours. What works best for me is using a microplane for a very fine, fragrant zest.
  6. Serve Immediately: Serve straight away to ensure the granola stays perfectly crisp.
