Ingredients
  

  • 6 ripe kiwi fruits
  • 2 large unwaxed limes
  • 500 ml cold filtered water
  • 1-2 tbsp honey or maple syrup optional, to taste
  • A small handful of fresh mint leaves optional
  • A tiny pinch of sea salt

Method
 

  1. Prepare the Kiwis: Wash the kiwi fruits well. Slice the ends off each kiwi and then use a spoon or a vegetable peeler to remove the fuzzy brown skin. Chop the peeled kiwis into rough quarters.
  2. Prepare the Limes: Using a fine grater or zester, zest one of the limes, being careful to only get the green part and not the bitter white pith underneath. Set the zest aside. Now, juice both limes. You should have about 60-80ml of fresh lime juice.
  3. Combine in Blender: Place the chopped kiwi, fresh lime juice, lime zest, and the small pinch of sea salt into the jug of your blender. If you're using mint, add the leaves now.
  4. Add Liquid: Pour in the 500ml of cold, filtered water. If you know you prefer a sweeter drink, you can add 1 tablespoon of honey or maple syrup at this stage. You can always add more later if needed.
  5. Blend Until Smooth: Secure the lid on your blender and blend on high speed for 45-60 seconds. What works best for me is a full minute to ensure the kiwi seeds are well pulverised, which makes the straining process easier and yields a smoother final juice.
  6. Taste and Adjust: Carefully taste the juice. If it’s too tart for your liking, add another tablespoon of your chosen sweetener and blend for another 10 seconds to combine.
  7. Strain the Juice: Place a fine-mesh sieve over a large jug or bowl. Pour the blended juice through the sieve, using the back of a spoon to gently press the pulp and extract as much liquid as possible. This step removes the seeds and any fibrous pulp, giving you a lovely smooth drink.
  8. Chill and Serve: Pour the strained Kiwi Lime Juice into glasses filled with ice. Garnish with a slice of lime and a sprig of fresh mint. It's best served immediately while it's cold and vibrant.

Notes

For the smoothest juice, don't skip the straining step. Best served immediately over ice with a fresh mint sprig and a lime wheel.
