Method
- Prepare Your Bread: Place a large, non-stick frying pan over a medium heat. Add the unsalted butter and let it melt and foam gently. Place your two slices of bread into the pan.
- Toast to Perfection: Toast the bread for 2-3 minutes on each side. We're looking for an even, deep golden-brown colour and a crisp texture. Keep the heat on medium to prevent the butter from burning before the bread is properly toasted. Once done, move the toast to a plate.
- Spread the Peanut Butter: While the toast is still piping hot, immediately spread a generous layer of crunchy peanut butter over each slice. What works best for me is using the back of a spoon to create a thick, even layer that reaches all the corners. The residual heat will make it extra creamy.
- Slice and Arrange the Banana: Peel the banana and slice it into 5mm (1/4 inch) rounds. Arrange the slices on top of the peanut butter, overlapping them slightly to ensure you get a bit of banana in every single bite.
- Drizzle and Season: Drizzle the honey or maple syrup evenly over the banana slices. This adds a touch of moisture and glossy sweetness that complements the other ingredients wonderfully.
- Add the Final Touches: Sprinkle the ground cinnamon over everything, followed by the flaky sea salt. Don't skip the salt – it's a game-changer! Finally, scatter over the chia seeds, hemp hearts, and crushed walnuts if you're using them.
- Serve Immediately: This toast is at its absolute best when served straight away, while the bread is still warm and crisp and the toppings are fresh.
